Zucchini Parmesan Bake

Preheat oven to 375 degrees

3 eggs

½ cup vegetable oil

3 cup shredded zucchini

1 cup biscuit/baking mix (Bisquick)

1/3 cup parmesan cheese

In large bowl whisk eggs and oil until blended.  Stir in remaining ingredients. 

Transfer mixture to a greased 10” oven proof skillet.  Bake 25-30 minutes or until golden brown.
