Zucchini Casserole

 

3 or 4 med size zucchini

1 med onion-diced

1 1/2 cups grated cheddar cheese

1 1/4 cups Bisquick

1 tsp. salt

1/2 tsp. pepper

1 tsp. oregano

3 eggs, beaten

1/2 cup salad oil

 

Wash and cut zucchini into 1/2 inch pieces. Chop onion and mix onion, zucchini and cheese. Add Bisquick, salt, pepper, and oregano.

 

In a separate bowl, beat eggs and oil together. Add to zucchini mixture. Bake in greased casserole at 350 degrees for 50 minutes to 1 hour. Serve.
