Taco Cornbread Pizza
1 pkg (8-1/2 oz) Jiffy corn muffin mix
1 lb ground beef
3/4 C taco sauce (or stir 1 pkg taco seasoning into 3/4 cup hot water)
2 C (8 oz) shredded cheddar cheese
Prepare corn muffin mix according to package directions. Spread into a greased 12-inch pizza pan. Bake at 400 for eight to ten minutes, until lightly browned. Brown beef until no pink remains; drain. Add taco sauce and cook two to four minutes longer. Sprinkle one cup cheese over crust. Top with cooked meat mixture. Sprinkle rest of cheese over meat. Bake five minutes, until cheese has melted. Serve with sour cream, salsa, shredded lettuce, chopped tomatoes, and sliced olives, if desired.
