Philly Meat Loaf
1 ½ lbs lean ground beef
1 large onion, chopped
1 green bell pepper, chopped small
1/2 C of whole milk
1/2 C mushrooms chopped (optional)
1 T olive oil
1 C bread crumbs (regular, Italian style or panko)
1 large egg
1/2 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp Seasoning salt
3 T Worcestershire sauce
8 slices of mozzarella or provolone cheese
Ready the oven and preheat to 350 degrees. Place a skillet on the stove and turn the heat to medium. Add oil and heat it through. Add the sliced onion and peppers. Sauté until soft and translucent. Place the onion and pepper mixture in a large bowl. Add the milk and meat and all other ingredients (except cheese). Mix using your hands until well combined. Apply cooking spray or butter in a loaf pan. Transfer 1/2 of the meat mixture into the prepared pan. Add four slices of cheese on top of the mixture. Place the rest of the meat mixture on top of the cheese. Place the pan inside the preheated oven and bake for 30 minutes or more. Remove from the oven and place the rest of the cheese and parsley over the meatloaf. Put the pan back in the oven and bake for 10 to 15 minutes more or until the cheese has melted completely.
