Crock Pot Meatloaf
2 lbs ground beef
1 1/3 C Italian breadcrumbs
1 large egg
1/4 C diced onion
1/4 C sweet red pepper (diced)
1 tsp minced garlic
1/2 tsp black pepper
1/2 tsp salt
2 cans Campbell's tomato soup
Mix all the meatloaf ingredients except the tomato soup in a large mixing bowl until combined well. Shape the ground beef mixture into a loaf that is a size that will fit inside your crock pot. Place the meatloaf into the crock pot. Pour the tomato soup over the meatloaf. Cook for four hours on high or eight hours on low or until the meatloaf is cooked through in the center. Serve with mashed potatoes and green beans.
