Country Beef Pie Recipe
Crust:
1 lb. lean ground beef
1/2 of 8 oz. can tomato sauce
1/4 cup EACH chopped onion and green pepper
3/4 tsp. salt
1/8 tsp. oregano
1/8 tsp. pepper
Combine all ingredients and mix well. Pat into bottom and up sides of a 9 inch pie plate.
Pinch up 1 inch flutings around edges of pan. Set aside.
Filling:
1-1/3 cup instant rice, uncooked
1 & 1/2 cans (8 oz. size) tomato sauce
1 cup water
1/2 tsp. salt
1 cup grated Cheddar cheese
Combine rice, tomato sauce, salt, water and 1/4 cup cheese.
Spoon mixture into meat shell and cover with foil.
Bake at 350 for 25 minutes.
Uncover and sprinkle top with remaining cheese.
Return to oven and bake, uncovered 20 minutes longer.
Cut in pie-shaped pieces to serve.
