BBQ Country Pork Ribs
2 quarts water
2 T salt
2 T garlic powder
1 tsp black pepper
8 country or farmer-style pork ribs (thick cut with little or no bone)
1 bottle (12 ounce size) hickory flavored barbecue sauce (or preferred flavor)
Combine the water, salt, pepper, and garlic powder in a large pan or Dutch oven. Add the ribs, adding more water if needed to cover them. Bring to a boil and let gently boil for 45 minutes, uncovered. They shouldn't be falling apart but they should be tender. Remove the ribs from the water (do not discard the water yet) and place on a rack in a large baking dish or roaster pan. Preheat oven to 325 degrees. Remove 1/2 cup of the cooking water and add it to the bottom of the baking dish. Baste the ribs with the barbecue sauce so they are completely covered. Cover the ribs with foil and place in the oven. Bake at 325 degrees for two hours. If desired, remove the foil at the end of the cooking time and place under the broiler.
