BBQ Barbecue Meatloaf
1 onion, chopped
1 T oil
1/2 C barbecue sauce
1 egg
1/3 C dry breadcrumbs
Salt and pepper
1-1/2 lb ground beef
Heat oven to 350 degrees. Chop the onion. Heat the oil in a frying pan over medium heat. Add the onion and cook until softened, about five minutes. Remove the pan from the heat. Combine 1/4 cup of the barbecue sauce, 1/4 cup water and the egg in a large bowl. Stir in breadcrumbs, one teaspoon salt and 1/4 teaspoon pepper. Crumble in meat and add onion. Mix until well combined. On baking pan, shape meat mixture into a loaf. Bake one hour. Spread remaining 1/4 cup sauce over meatloaf and continue baking 30 minutes longer. Let stand ten minutes before slicing.
