Amish Nachos (this makes a large quantity but can easily be divided in half for smaller size)

3 lbs ground beef browned
1 quart (32 oz) salsa
1 quart corn
1 1/2 C mayonnaise
3 T chili powder
6 C corn chips
6 C shredded Colby-jack, cheddar, or mozzarella cheese

Mix first five ingredients. Put half in the bottom of a large casserole. Then put in half of chips, then half of cheese. Repeat layers.  Bake until heated through at 350 degrees for 30 to 40 minutes. You may top with lettuce and tomatoes if you would like.  Note: Omit chili powder if using hot salsa.

 

Smaller Amish Nachos


1 1/2 lb ground beef browned
16 oz salsa
2 C corn
¾ C mayonnaise
1 ½ tablespoons chili powder
3 cups corn chips

3 cups shredded Colby-jack, cheddar, or mozzarella cheese

Follow same directions as large size.
