Cheeseburger Salad
1 lb ground beef (or turkey)
1/4 C red onion, diced
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
2 T ketchup
1 tsp Dijon mustard (or yellow mustard)
1 tsp Worcestershire sauce
salt to taste
8 C Romaine lettuce, chopped
2 C cherry tomatoes, halved
1/2 C dill pickles, chopped
1/4 C red onion, sliced (or diced)
3/4 C shredded cheddar cheese
Heat a skillet over medium-high heat. Add the ground beef and onion to the pan. Cook until no longer pink, breaking up the beef as it cooks. Add the garlic powder, onion powder, black pepper, ketchup, mustard, and Worcestershire sauce. Cook for about two minutes. Taste and season with salt and pepper as needed. To assemble the salad, add the Romaine lettuce to a large bowl. Layer in the tomatoes, pickles, red onions, shredded cheese, and ground beef mixture. Top with dressing of choice.
Cheeseburger salad if usually served with Thousand Island dressing. To make an easy, lightened up Thousand Island, combine 3/4 cup Greek yogurt, 2 tbsp mayonnaise, 2 tbsp ketchup, 2 tbsp sweet relish, 2 tbsp minced onion, 1 tsp Worcestershire sauce, 1/2 tsp sweet paprika, 1/16 tsp hot sauce (optional), salt, and pepper. Refrigerate for at least one hour for optimal flavor.
