Sour Cream Pancakes

1 1/4 C flour
1 1/2 tsp baking powder
1/4 tsp salt
3 tsp sugar
1 tsp baking soda
2 eggs, lightly beaten
1 tsp vegetable oil
1/2 C sour cream
1 C buttermilk or milk
Add green food coloring for ‘green pancakes’

Combine dry ingredients in a large bowl. Whisk to blend. Combine eggs, oil, sour cream, and buttermilk or milk. Stir into flour mixture until smooth. Spoon about 1/3 cup batter per pancake onto nonstick griddle or skillet.  How about making them in the shape of four leaf clovers?  Turn when tops are covered with bubbles and edges looked cooked. Cook until second side is browned. Serve with syrup and/or fruit. Makes 12 medium sized pancakes.
