Gingerbread Pancakes
1 C flour
1 T sugar
1 tsp baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
dash ground cloves
2 T molasses
1 T vegetable oil
1 C buttermilk
1 egg, slightly beaten
In large bowl, combine all the dry ingredients. In a small bowl, whisk together the wet ingredients. Slowly pour the liquid mixture into the flour mixture and stir until just moistened. Lightly grease a griddle or pan over medium-low heat and cook the pancakes for about three minutes on each side. Makes six medium pancakes.
