Cornmeal Griddle Cakes
1 1/3 C cornmeal
1 1/2 C boiling water
2/3 C flour
3/4 C milk
1 T molasses
1 1/2 tsp salt
2 T fat
4 tsp baking powder
Scald meal with boiling water. Add milk, fat, and molasses. Add sifted dry ingredients. Stir to combine. Bake on hot griddle like traditional pancakes.
