Breakfast Wraps
2 wraps, 8” or 10” tortillas
3 eggs
1 1/2 T milk
1/8 T salt
1/8 tsp pepper
1 tsp butter
handful of fresh spinach, optional
1/3 C fresh peppers, diced
1/3 C diced cooked ham
2 T feta cheese (or use your favorite cheese)
Heat wraps as directed on package. Whisk together eggs, milk, salt, and pepper. In a non-stick skillet melt butter and saute peppers for several minutes. Add diced ham and just heat through for another minute. Pour egg mixture over peppers and ham in skillet. Cook, scrambling eggs until cooked to your liking. This only takes a few minutes for the eggs to cook. Place warmed wraps onto plates. Top with fresh spinach. Divide scrambled egg mixture over spinach and top with cheese. Roll to wrap and serve immediately. Options: Try adding fresh tomatoes or a spoon full of salsa. Jalapeno peppers or green onions will add nice flavor as well. Cooked and crumbled bacon or breakfast sausage are a good choice too. These also freeze well.
