Bohemian Rye Bread
2 C of regular flour
1 C of rye flour
1 tsp yeast
1-1/2 tsp salt
1 tsp ground caraway
1 1/2 C warm water
Pour the dry ingredients into a bowl and mix. Then add warm water and just mix the dough. cover with a towel and let rise for 8 to 12 hours. Put the risen dough on a floured surface and spread into a “pancake” and leave it to rise for another 15 minutes. Then the dough is folded into thirds from the bottom and top and from the sides. Let it rise again for 30 min, then preheat the oven to 230 degrees and let it rise for another half an hour. And then the dough is placed in the baking dish, which we let warm up in the oven for the last half hour. We can sprinkle caraway again... Bake for 30 minutes with the lid on and finally another 15 minutes without the lid. It is good to make the dough overnight and bake it in the morning, or to make it in the morning and bake it in the evening on the weekend. It takes a long time, but hands on time is really only a few minutes. I also added sautéed onions to the dough.
