Cheese Puffs
1 C water
2 T butter
1/2 tsp salt
1/4 tsp cayenne pepper
1 C flour
4 eggs
1 2/3 C shredded cheese
2 tsp Dijon mustard
These are quick and easy to make and can be served hot or cold. In a saucepan bring water, butter, salt, and cayenne pepper to boil. Add flour all at once, stirring until a ball forms. Remove from heat. Add eggs one at a time, beating well after each addition until mixture is smooth. Stir in cheese and Dijon mustard. Drop by rounded teaspoonfuls on parchment lined baking sheets, two inches apart. Bake in a 425-degree oven for 20 minutes or until golden in color. Yield: Three dozen
