Creamy Caramels

Prep. Time 10 minutes. Cook 30 minutes and let cool
Yields: 64 pieces
1 teaspoon plus 1 cup butter divided
1 cup sugar
1 cup dark corn syrup
1 can (14 oz) sweetened condensed milk
1 teaspoon vanilla extract
Line a 8” square pan with foil and grease the foil with 1 teaspoon butter; set aside.
Combine sugar, corn syrup and 1 cup butter in a large saucepan. Bring to a boil over medium heat, stirring constantly. Boil slowly for 4 minutes without stirring. Remove from heat. Stir in Sweetened condensed milk. Reduce heat to medium low and cook until candy thermometer reads238 degrees (soft ball stage) stirring constantly. Remove from heat, stir in vanilla. Pour into prepared pan. Let cool. Remove from the pan and cut into 1” squares. Wrap individually in waxed paper. Twist ends.
