Spoon Bread

1 pkg. dry yeast

2 cups warm water, divided

1 teaspoon sugar

¼ cup sugar

1 egg, slightly beaten

½ cup vegetable oil

 1 ½ teaspoon salt

4 cups all purpose flour

3 teaspoon baking powder

Add yeast to 1 cup of the warm water, along with 1 teaspoon sugar.  Allow it to bloom in a warm place for about 10 minutes.  Add to a large bowl, along with the additional 1 cup water and remaining ingredients.  Beat until well mixed.  Place in an airtight container and store in refrigerator.  As needed, spoon into a greased muffin tin.  Bake at 400-degree oven for 15-20 minutes, or until golden brown. 

Any remaining dough can be stored in the refrigerator for up to 1 week.
