Prime Rib Au Jus

1 rib roast
salt
pepper

Let roast stand at room temperature for one hour. Preheat oven to 375 degrees. Rub meat with salt, sprinkle with pepper (I use Snider’s Prime Rib & Roast Seasoning). Lay fat side up in a shallow pan, do not cover or add water. Cook exactly one hour (40 minutes if there is no bone). Turn off oven, DO NOT open oven door until ready to serve. Forty minutes before serving, turn oven on again at 375 degrees.
