Zucchini Salad

2/3 cup cider vinegar

2 Tablespoons wine vinegar

½ cup oil

½ cup sugar

½ teaspoon pepper

1 teaspoon salt

½ cup diced onion

½ cup diced celery

½ cup chopped green pepper

5-7 small zucchini, sliced

1 (2 ounce) jar diced pimiento

 

Combine the vinegars, oil sugar, pepper and salt.  In a bowl, toss together the onion, celery, green pepper, zucchini and pimiento.  Pour the dressing over and toss.  Cover and allow to marinate in refrigerator for several hours.
