Zucchini Pudding Cake

 

1 yellow cake mix

1small pkg. Vanilla instant pudding

4 eggs

1/4 cup oil

3 Cups grated zucchini

1/2 teaspoon salt, opt.

1 1/2 teaspoons cinnamon

1 Cup chopped pecans

1 teaspoon vanilla

 

Combine all ingredients in mixer bowl. Blend, then, beat at medium speed for 4 minutes. Pour into a sprayed or greased/floured 10 inch tube pan. Bake at 350 degrees for 50-55 minutes till it tests done. Cool for 15 minutes. Remove from pan. Pour a powdered sugar glaze on top.
