Zucchini Cookies Recipe

1-1/2 cups flour

1/2 tsp salt

1/2 tsp nutmeg

1 tsp baking soda

1/4 tsp cloves

1/2 tsp cinnamon

1/2 cup margarine

2/3 cup honey

1 cup ground zucchini

1 egg, beaten

1/2 cup rolled oats

1/2 cup shredded coconut

Beat for 3 minutes margarine, honey, egg and zucchini. Add flour, salt, nutmeg, soda, cloves and cinnamon. Then add 1/2 cup rolled oats and 1/2 cup shredded coconut. Drop by heaping spoonfuls onto oiled cookie sheet. Bake at 325 degrees for 15 minutes until golden brown. Makes 5 dozen.
