Zucchini Cake 
3 eggs
1 C oil 
1 3/4 C sugar 
1 tsp salt 
1 tsp baking powder 
1 tsp baking soda 
1 T cinnamon (opt) 
2 C grated, unpeeled zucchini squash 
2 C flour 

Cream Cheese Frosting 
8 oz of cream cheese, softened 
1 stick butter, melted 
1 tsp vanilla 
3 1 /2 C powdered sugar 

Blend together eggs and oil, then add remaining ingredients. Pour into a greased 9 x 13-inch cake pan. Bake at 350 degrees for 50 to 60 minutes. If desired, spread with cream cheese when cooled frosting. Frosting: Whisk together until smooth. More or less powdered sugar may be used to obtain desired consistency. Spread on cooled cake.
