Summer Fruit Dessert

 

Cake layer:

2 C all-purpose flour

2 tsp baking powder

1 C sugar

1/8 tsp salt

1/2 C butter

1 C milk

2 beaten eggs

2 tsp vanilla

 

Fruit layer:

fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.

 

Topping:

1/4 C melted butter

3/4 C all-purpose flour

3/4 C sugar

 

Cake layer:

Blend flour, baking powder, sugar, salt, and butter in a large bowl.

Stir in milk, eggs, and vanilla.

Spread in a well-greased jelly roll pan (17x11x1-inch)

 

Fruit layer:

Spread favorite fruit over cake layer

 

Topping and baking:

Combine topping ingredients until crumbly. Sprinkle over fruit and bake at 375 for 30 to 35 minutes. Yields: 40 squares.
