Sponge Cake

Beat 8 egg yolks and ¼ cup water till thick (about 5 minutes)

Then gradually add 1 ¼ cups sugar, 1 ¼ cup flour and 1 teaspoon lemon extract.

In another bowl, beat 8 egg whites and 1 Tablespoon sugar and ¾ teaspoon Cream of Tartar till stiff.

Fold yolk mixture and white mixture together. 

Pour into tube pan.

Bake 1 hour at 325 degrees.
