Raisin Nut Bars

1 ½ cups sugar

4 eggs

1 ½ cups flour

½ teaspoon baking powder

½ teaspoon cinnamon

1/8 teaspoon salt

1 Tablespoon vanilla extract

½ cup ( 1 stick ) melted butter

1 ½ cups raisins, plumped

1 cup chopped walnuts

Cover raisins with water in a small pan and boil for 5 minutes.  Drain and cool  

Preheat oven to 350 degrees.  In large bowl, beat together sugar and eggs.  

Add flour, baking powder, salt, cinnamon and vanilla and mix well. 

Add melted butter and mix to combine.  Fold in raisins and walnuts.

Pour batter into a greased or wax- paper-lined 9” x 13”  

Bake for 30-40 minutes.  Bars are done when top is golden brown and crispy and knife inserted in center comes out clean. 

Cool and cut into bars.
