Oatmeal Pie Recipe

 

1 unbaked 9 inch pie shell

1/4 cup butter

1/2 cup sugar

1/2 tsp. cinnamon

1/2 tsp. cloves

 1/4 tsp. salt

1 cup dark corn syrup

3 eggs

1 cup quick-cooking rolled oats

 

Cream together butter and sugar; add cinnamon, cloves and salt. Stir in syrup.

Add eggs, one at a time, stirring after each addition until blended. Stir in oats.

Pour into pie shell. Bake at 350 50 to 60 minutes, or until knife inserted in center of pie comes out clean.

 

Note: during baking, the oatmeal forms a chewy "nutty" crust op top. We like it with a little whipped cream on top of ours.
