New Year's Cookies

Dissolve 1 Tablespoon yeast in 2 ¼  cups warm milk

Add:

¼ cup sugar

3 eggs, well beaten

1 ¼ teaspoons salt

¼ cup melted margarine

Plump ¾ pound of raisins in hot water for a minute or two.  Drain and cool them add to the above mixture.

Add enough flour to make a soft dough perhaps using 4-5 cups.  This should be a very soft dough.  (You want the raisins to stay covered with dough.  If you add too much flour the raisins will come out when you fry the cookies.)

Let rise until doubled.  Heat oil in kettle or deep fat fryer to 350-375 degrees and dip spoon in hot fat, then dip spoon into dough dropping dough by spoonsful into oil.  Turn to fry golden brown.

May be rolled in sugar or glazed with a powdered sugar frosting.
