Holiday Fruit Cake

1 pound (16 oz.)  dates or raisins

One-half pound (8 oz) pecans (chopped)

1 cup maraschino cherries (red and green, drained)

¾ cup flour

¾ cup sugar

1/2 teaspoon baking powder

4 eggs

1 teaspoon vanilla

Preheat oven to 300 degrees. Put dates, nuts and cherries in a large bowl.  Sift flour, sugar, baking powder over mixture. 

Mix until well coated.  Beat eggs and vanilla until foamy.  Mix into other mixture.  Makes 18 cupcakes. 

Bake for 40 – 50 minutes  or pour into waxed paper bottom lines bread pan. 

Bake in preheated oven for 1 hour and 45 minutes at 300 degrees.  Can use other dried fruit also.

  **I use foil cupcake papers.  I glaze with peach schnapps while hot. 

Wrap in plastic wrap and  Put in refrigerator  a few weeks ahead to get moist.
