Fresh Peach Cobbler

6 medium peaches, peeled and sliced with color keeper (Fruit Fresh) or lemon juice
2 tablespoons flour
½ cup sugar
¼ teaspoon cinnamon
Stir the flour, sugar and cinnamon together and mix well. Add to the peaches, stir and let stand in a 1 ½ quart casserole while you make the topping.

Topping:
1 cup flour
2 Tablespoons sugar
1 ½ teaspoon baking powder
¼ teaspoon salt
¼ cup butter
1 egg, slightly beaten
¼ cup milk
Sift together flour, sugar, baking powder and salt. Cut butter in until mixture resembles coarse crumbs. Combine egg and milk; add all at once to the flour mixture. Stir just to moisten. Spoon the topping in mounds on top of the casserole of peaches. Bake at 375 degrees for 25 minutes until golden brown.
