Fortune Cookies

1 egg
1/3 cup sugar
1/3 cup flour
3 Tablespoon cooking oil
2 Tablespoons water
½ teaspoon vanilla
¼ teaspoon cinnamon

On your computer, typewriter or by hand, write up several verses or sayings.  Cut them apart and have them ready for your fortune cookies.

Preheat your griddle on medium heat (350 degrees if using an electric skillet)and put a little oil into your skillet.

In a medium bowl, start by using a fork to beat the egg until it is foamy.  Add in the sugar and continue to beat until the mixture is combined and becomes fluffy.

Add in flour, oil, water, vanilla and cinnamon, stirring until the batter becomes smooth.  Drop the batter on the skillet by using a tablespoon.  Use the back of the spoon to spread the batter into a thing circle about 3 1/3” around.

Cooking them is similar to cooking a pancake; as the cookies become done, bubbles will appear, use a pancake turner to flip the cookie and lightly brown the other side.  Once your cookie is done, you’ll have to work quickly.  Flip the cookie onto your hand (have a paper towel or two on your hand) Place one of your fortune-slips in the center of the cookie and fold it in half.  Gently wrap the two ends of the cookie toward each other around the handle of the wooden spoon, holding them together for a minute or so until the cookie becomes firm. Dust with powdered sugar if desired.   The final product is a tasty treat and also a way to give a ‘secret message’.
