Cinnamon Walnuts

 

2-1/2 cups walnut halves

1 cup sugar

1/2 cup water

1 tsp. cinnamon

1 tsp. salt

 1-1/2 tsp. vanilla

 

Place walnut halves in a shallow pan. Heat at 375º for about 15 minutes, stirring frequently.

Take walnuts out of the oven. Cook sugar, water, cinnamon and salt to a soft ball stage (236º°) without stirring.

Remove from heat and add vanilla, and toasted walnut halves.

Stir gently until the nuts are well coated and mixture becomes creamy.

Turn out on greased platter. Separate the walnut halves as they cool. Store in airtight container. 

Can put in small pretty containers, and give out during the holidays
