Butter Fudge Mellow Cake

1 2/3 cup sifted flour

1 1/3 cup sugar

1 teaspoon soda

1 teaspoon salt

3 eggs

½ cup cocoa

½ cup soft shortening (Like Crisco)

1 cup buttermilk or milk

1 teaspoon vanilla

Heat oven to 350 degrees.  Grease and flour a 9 x 13” pan.  Sift dry ingredients into bowl.  Add shortening, milk and vanilla.  Beat 2 minutes at medium speed or by hand, 300 strokes.  Add eggs, beat 2 more minutes, scraping bowl frequently.  Pour into baking pan.  Bake about 45 minutes or until done.  Finish with filling and frosting.

Butter Fudge Filling:

1 can evaporated milk

1 cup brown sugar

1 cup white sugar

4 Tablespoon flour

½ cup butter

3 egg yolks

Mix all together in saucepan and cook over medium heat until thick, about 2 to 3 minutes.  Add vanilla and put on cooled cake.  Frost cake with 7 Minute frosting.
