Banana Split Bars

2 ripe bananas (1 cup)

2 C flour

1 C sugar

3/4 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1-8 oz can crushed pineapple, undrained

2 eggs

1/2 C vegetable oil

1 tsp vanilla extract

1/4 C maraschino cherries, drained and halved

Nuts, chopped (if desired)

 

Frosting 

1-3-1/2 oz pkg cream cheese

1  T butter

1 lb confectioners sugar

1 T. milk or cream

1 tsp vanilla

 

Puree bananas. Combine flour, sugar, baking soda, salt and cinnamon in large bowl. Add bananas, pineapple with juice, eggs, oil and vanilla. Mix until well blended. Stir in cherries. Pour in greased and floured 9 x 13 inch pan. Bake in 350 degree oven for 30 to 35 minutes. Cool 30 minutes. Spread with frosting.

 

To make frosting:

Cream butter and cream cheese, beating until light. Stir in sugar. Mix well and add milk as needed. Add vanilla. Spread and cut in bars.
