Zucchini Bread

3 eggs
3 cups flour
2 cups sugar
1 teaspoon baking powder
1 cup oil
1 teaspoon baking soda
1 teaspoon vanilla
½ teaspoon salt
2 cups zucchini, grated
1 teaspoon cinnamon
½ cup nuts

Beat eggs, add sugar, oil and vanilla. Mix together flour, sugar, baking powder, baking soda, salt and cinnamon, add to egg mixture. Stir in zucchini and nuts, pour into 9 x 5 greased and floured loaf pan. Bake at 350 degrees for 1 hours and 20 minutes (80 minutes or until toothpick comes out clean when poked into center). Can use 2 small loaf pans, check for doneness after 45 minutes with smaller loaves.
