Sweet Potato Biscuits

 

2 c. sweet potato, mashed

1 tsp. vanilla

1/2 c. margarine, melted

 1/2-3/4 c. sugar

2-3/4 c. flour

4 tsp. baking powder

1-1/4 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. nutmeg

3/4 c. chopped nuts, optional

 

Preheat oven to 450 degrees. In a large bowl, mix sweet potatoes, vanilla, margarine and sugar.

In another bowl, combine flour, baking powder, salt, cinnamon, nutmeg and nuts.

Add the dry ingredients to the sweet potato mixture and mix well. Turn onto a floured surface and knead 4 times.

Roll out dough to 1/2 inch thickness. Cut with biscuit or fun-shaped cookie cutters.

Place on lightly greased cookie sheet. Bake at 450 degrees for 10 minutes or until golden brown.
