Judy's Zucchini Bread  

 

1 cup sugar

1/2 cup cooking oil

2 eggs

1 tsp. grated lemon rind

1/2 tsp. orange extract

1-1/2 cups flour

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/8 tsp. nutmeg

1/8 tsp. ginger

1 cup unpeeled grated zucchini

1/2 cup chopped nuts  

Beat first 5 ingredients together in a bowl. Mix together flour, spices, baking powder, salt and baking soda and add alternately with zucchini to sugar mixture, beating well after each addition.

Stir in nuts. Pour into well greased 9 x 5 inch loaf pan. Bake at 350º for about 50 minutes, or until it tests done. Cool 15 minutes before removing from pan.
