Fried Corn Meal Mush

2 ¾ cup boiling water

1 cup cornmeal

1 cup cold water

1 teaspoon salt

1 teaspoon sugar

Bring water to a boil. In a separate bowl, combine cornmeal, cold water, salt and sugar. Gradually add mixture to the boiling water, stirring constantly. Cook until thick, stirring frequently.

This really hot mixture splatters as you boil it, so be really careful not to burn your hands or arms. Cover and cook over LOW heat 10-15 minutes. Pour into 7 ½ x 3 ¾ x 2 ¼ inch loaf pan. Cool in refrigerator at least one hour, preferably overnight.

When ready to cook it….turn the mush out onto a bread board and cut into ½ inch slices. Coat flour on both sides. Fry slowly in skillet or griddle, turning once. Make sure both sides are browned. It takes a long time to fry the mush to get it browned, and you do have to add oil once in awhile to keep it from sticking. Can be served with butter and syrup or crumbled up with milk and sugar.
