Cornmeal Griddle Cakes
Neva Jones, O'Neill, NE

1 ½ cups all-purpose flour
4 teaspoons sugar
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
¾ cup cornmeal
1 ¼ cups boiling  water
1 ¾ cups buttermilk
3 Tablespoons butter, melted
2 eggs, beaten

In a large bowl, combine the flour, sugar, baking powder, salt and baking soda; set aside.  Place cornmeal in a large bowl; stir in boiling water.  Add buttermilk and butter.  Whisk in eggs. Stir in dry ingredients just until moistened.

Pour batter by ¼ cupfuls onto a greased hot griddle.  Turn when bubbles form on top; cook until second side is golden brown.   Yield 20 griddle cakes.
