Wild Rice Soup Recipe

 

1 cup uncooked wild rice

3 cups boiling water

2 strips smoked bacon (I use more bacon)

1/4 cup chopped onion

3/4 cup sliced celery

1/2 cup sliced carrots

2 cans cream of mushroom soup

2 soup cans milk

1 can (14 oz.) chicken broth

1 can (4 oz.) mushrooms, with liquid

1 tsp. seasoned salt (I cut in half)

 Pepper, to taste

Directions

Combine rice and boiling water in large saucepan; simmer, covered, 50 minutes.

Drain off excess liquid; set rice aside. Fry bacon until crisp and crumble.

Sauté onion, celery and carrots in small amount of bacon fat.

Combine broth, soup, milk, mushrooms, salt and pepper, reserved crumbled bacon, sautéed vegetables and wild rice.

Simmer, covered for 1 hour.

Makes 8 servings.
