'Souper' Scalloped Potatoes  

 

10 oz. Cream of Mushroom or Cream of Celery soup

1/2 c. milk

1/4 c. snipped parsley

1/4 tsp. coarse black pepper

4 c. thinly sliced potatoes  

1 medium onion, thinly sliced

Butter & paprika  

**Options

**Add chopped  ham, Canadian bacon or pre-cooked bacon with the onions, according you what you want or what you've got.

Mix soup, milk, parsley, & pepper. In a buttered 2 qt. casserole layer potatoes, onions, & sauce; repeat twice.

Dot with butter & dust with paprika. Cover & bake 1 hour at 375º, uncover & bake 15 minutes more, till potatoes are tender & top is golden brown.

Serves 4 - 8.  

If using mushroom soup, you can add nutrition with a drained can of sliced mushrooms; if using celery soup, nuke sliced celery till tender & add it with the onions instead.  

Go another whole route & use Cream of Chicken soup, & add some left-over chopped chicken. Easy to see this was a go-to dinner at our house lots of times.
