Cheese Cauliflower Bake

1 medium head cauliflower broken into florets
1/4 C boiling water
1 1/2 C sour cream
1 C cheddar cheese, grated
1/2 C sweet red pepper, chopped
1/2 C sweet green pepper, chopped
2/3 C cornflakes, crushed
1 tsp salt
1/2 tsp pepper
1/4 C Parmesan cheese, grated
1/4 tsp paprika

Cook cauliflower in 1/4 cup boiling water for five minutes, until tender crisp.  Drain.  Stir in sour cream, cheddar cheese, red and green peppers, crushed cornflakes, salt, and pepper.  Pour into a 9 x 13-inch greased pan. Shake parmesan cheese evenly over top.  Sprinkle with paprika.  Bake uncovered in a 325 degree oven for 35 minutes.  Serves eight.
