Sue's Meat Loaf with Glaze  

 

Ingredients

1-1/2 lb. ground beef

1/2 c. ketchup

1/3 c. tomato juice

1/2 tsp. each salt and pepper

1/8 tsp. red pepper  

2 eggs, beaten

3/4 c. soft breadcrumbs

1/4 c. chopped onion

2 tsp. prepared mustard

1/4 c. ketchup

1/2 tsp. prepared mustard  

2 tsp. brown sugar  

 

Directions

n large bowl, combine 1/2 cup ketchup, tomato juice, salt, peppers, eggs, breadcrumbs, onion and 2 teaspoons mustard.

Mix thoroughly. Add ground beef. Mix. Press beef into a 5 X 5 loaf pan. Combine 1/4 cup ketchup, 1/2 teaspoon mustard and brown sugar and spread over meatloaf.

Bake at 400° for 35 to 40 minutes or until done. Garnish with fresh herbs, if desired.
