Simple Cowboy Supper

Cornbread:

1 cup flour

¾ cup cornmeal

2 to 3 Tablespoons sugar

2 ½ teaspoons baking powder

¾ teaspoon salt

2 egg, beaten

1 cup milk

¼ cup cooking oil

Preheat oven to 400 degrees.  Combine flour, cornmeal, sugar, baking powder & salt.  Combine eggs, milk and oil.  Add egg mixture to flour mixture.  Stir  until moistened.  Pour into a round pan or skillet.  Bake for 15-20 minutes until a toothpick inserted into middle comes out clean.

Topping:

Brown 1 pound hamburger.  Drain a can of black beans and add to hamburger.  Mix in a packet of taco seasoning.  Cook hamburger, beans & seasoning till well combined.  Add a can of cheddar cheese sauce to hamburger mixture and stir well.

Chop up a couple of medium sized tomatoes.

Shred a head of lettuce or you can use bagged lettuce.

Take out cornbread from oven, top with beef & bean mixture.  On top of beef & bean mixture, top with lettuce and tomatoes and sour cream.  Slice and serve.

Other toppings:  Jalapeños, olives, onions, peppers, or whatever you like.
