Quiche Italiano

 

1 9-inch frozen pie crust, thawed

2 C shredded mozzarella cheese, divided

1/2 C spaghetti sauce

1/3 C (1 oz) pepperoni slices

1/4 C chopped green bell pepper

1/4 C chopped onion

3 eggs

1 C heavy cream

1/2 tsp dried oregano

1/4 tsp salt

1/4 tsp black pepper

 

Preheat oven to 375 degrees. Layer pie crust with one cup of cheese, then spaghetti sauce, pepperoni, green pepper, onion, and remaining cheese. In a medium bowl, combine eggs, heavy cream, oregano, salt, and pepper; mix thoroughly and pour over filling.  Place on a baking sheet and bake 50 to 55 minutes, or until top is golden and a knife inserted in center comes out clean. Cool 15 minutes, then cut into wedges.
