Potato Meat Dumplings

 

8 large potatoes (grated)

2 eggs

Salt & Pepper

2 cups fresh bread crumbs

¾ cup ground pork, ham or bacon (I usually use leftover ham or pork already roasted)

 

Drain grated  potatoes.  Add egg, bread crumbs, meat and seasoning and mix well. 

Make into little round balls, size of an egg.  Roll in flour, as much as it will absorb.  

Drop into boiling, salted water.  Boil for 30  minutes.  Serve with onions fried in butter.
