Impossible Seafood Pie

 

 

1 can (6 oz.) tuna, drained, or 8 oz. frozen crab meat or shrimp, thawed & drained

1 cup shredded American (or Cheddar) cheese

1 pkg. (3 oz.) cream cheese, cut up

1/4 cup sliced green onions

1 jar (2 oz.) chopped pimiento, drained (optional)

2 cups milk

1 cup Bisquick baking mix

4 eggs

Dash nutmeg

3/4 tsp. salt

 

Grease a deep 10" pie plate. Mix seafood, both kinds of cheese, onions and pimiento in plate. Beat remaining ingredients 15 seconds in blender on high or 1 minute with hand beater.

Pour into pie plate. Bake at 400 for 40 to 50 minutes, or until knife inserted, comes out clean. Cool 5 minutes. Can garnish with sliced tomatoes. 6 to 8 servings.
