George Washington's Chicken Pie

 

4 c. cooked, diced chicken

3/4 c. butter

3/4 c. flour

1 t. salt

1/8 t. pepper

2 c. chicken stock

2 c. light cream (or milk)

1 t. lemon juice

Melt butter; add flour & stir until mixture is smooth.  Add stock & cream slowly, stirring constantly. 

Cook about 15 min. until thickened.  Remove from heat & add lemon juice.  Combine w/chicken. 

Turn into 9 x 13 baking pan.

Topping:

1-1/4 c. sifted flour

1/2 t. salt

2 t. baking powder

4 eggs, separated

1 c. milk

2 T. melted butter

Sift flour, salt, & baking powder together.  Beat egg yolks until right & fluffy; add milk & melted butter. 

Add dry ingredients.  Beat egg whites until stiff. Fold into batter.  Pour over creamed chicken. 

Bake 425 about 10-15 min. or until topping is done.
