Deer Steak

1 Gallon water

2 cups salt

1 cup sugar

Bring to boil then cool.  Put one cup brine in a quart jar and drop pounded steak into jar up to neck.  

Process ½ hour in water bath.  Do not have to use pressure cooker here.

To use, remove meat from jar. 

Soak  awhile to get out some of the salt but you don’t have to. 

Dip in flour and fry as steak. 

Can use the brine for gravy.
