Chicken Zucchini

3 C zucchini; sliced
4 C cooked chicken; diced
1 C cream of chicken or; mushroom soup
1 C carrots; shredded
1 C sour cream
1 C cheddar cheese; shredded
1 1/2 C butter; melted
1 pkg seasoned stuffing mix; 8 oz
1 can sliced water chestnuts; drained
1 can mushrooms; drained
1/2 C onions

Wash zucchini; cook five minutes in boiling salted water. Combine soup, carrots, sour cream, onions, water chestnuts, and mushrooms. Fold zucchini into mixture. Add chicken and Cheddar cheese. Mix melted butter with stuffing mix. Spread all but one cup in a 9 x 13−inch pan. Put mixture over stuffing. Cover with remaining crumbs and bake at 350 degrees for 45 minutes.
